How can we enhance the nutritional value of the food?

Alpha: Adequate nutrient intake is critical for crew health.
You can add more nutrients by increasing the level of nutracreuticals in food products of dairy and soy origins. Neutracreutical: A nutraceutical is a food or food component that claims to have health benefits, including treatment and prevention of disease. In some cases nutraceuticals have been proven to provide nutrients essential for fighting off a disease. The targeted neutraceuticals are low-calorie-sugars, digestion-stimulating oligosaccharides, and essential B-vitamins. Oligosaccharides-Oligosaccharides are sugars having two or more monosaccharide units. Monosaccharides are single sugars such as glucose and fructose. These components will all be produced by food grade microorganisms (bacteria,algea ect...) In addition, some undesirable sugars such as lactose, galactose, and raffinose will be selectively removed from either dairy or soy containing food products. The status of vitamins D and folate decrease after long duration space flights. Broccoli decreased in folic acid as well as vitamins K and C. Most of the vitamins in the vitamin supplement decreased after 353 days in storage. There was evidence of lipid peroxidation in almonds after 13 days in storage. Lipid peroxidation is a chemical imbalance that causes cell membranes to be broken down. NASA's researchers found that the nutrients in samples that were sent into space did not degrade any faster than the samples that weren't sent into space. NASA's researchers are looking at different types of packaging to increase the shelf life of food. There are many different ways to preserve food so that it lasts longer, a few of the ways are refrigerating, freezing, locking moisture out, and keeping oxygen away from the food. Small changes in things such as temperature can get rid of every single nutrient in the most nutritious food ever. That is why storage impacts food. If you are trying to grow plants, a 10 degree rise in temperature could kill a seedling and if the seed isnt even planted yet it halves their storage life, but a 10 degree drop in temperature does the exact opposite. To get rid of the oxygen use an inert gas like nitrogen to purge the oxygen. You can vacuum seal to get rid of moisture and all you have to do to take care of temperature is stick the food in a ventalated area. Dehydrated food can last up to 30 years in storage with correct care.
Beta: Space-nutritionists specialists must know how much of various individual nutrients must be availible in the spaceflight food system. NASA nutritionists make sure they have plenty of healthy, appetizing food while they're living in orbit. The USDA defines an 'essential nutrient' as a dietary substance required for healthy body functioning. Essential nutrients must came from the diet because the human body can't manufacture them in sufficient quantities to meet daily needs. And it's more calcium and vitamin D.

Is it possible to grow food on the moon?

Plants offer a good answer for providing food to astronauts thousands of miles from Earth. They could grow plants that wil both supplement a healthy diet, and also remove toxic carbon dioxide from the air inside their spacecraft and create life-sustaining oxygen.
Food is very important to today's astronauts. It provides them with nutrition and a comfort from home. The austronauts food managers should have taste-tests to see what kind of food they would like most.
NASA space food scientists are developing an Advanced Food System that will provide future crews traveling to the moon and Mars with safe, nutritious and appetizing food while minimizing volume, mass and waste.
The most recent "crop" -- a type of Japanese lettuce called Mizuna -- returned to Earth in April aboard space shuttle Discovery. It was the first time two chamber experiments were conducted at the same time for a side-by-side comparison of plants grown using different fertilizers and treatments.
so we think growing food on the moon is a possibility.The requirements for plants would be,1.proper tempreture. if we are plannning on growing warm-seasoned plants the tempreture will need to be around 60 and 75. For cold-season plants a good temperature is around 50 to 70 degrees. Vegetables and flowers need alot of sunlight. The hydroponics plants need 8-10 hours of direct sunlight.
